Kei-chan (Stir fried chicken with miso sauce)

Kei-chan

A local taste where you can enjoy in various parts of Gujo.

Kei-chan has a nice flavor of miso, soy sauce, and garlic. It goes so well with rice and sake. It has been loved as a local dish for a long time at the mountain villages of Gifu-ken, including Gujo. In Gujo, many families used to keep chickens as livestock in the past. They started cooking and eating chickens which no longer lay eggs. Soaking chicken in sauce with cabbage, bean sprouts and seasonal vegetables and stir-frying it, but there are differences in seasoning depending on region, home, and restaurant. It is very interesting that you can enjoy each particular taste.

In Gujo-shi, you can taste unique original Kei-chan in various places, but especially in Meiho area, Meiho Kei-chan Study Group is focusing on revitalizing the town by Kei-chan. Many restaurants are providing roasted Kei-chan too. At Roadside Station Meiho (surusumi-no-sato Park), there is a restaurant where you can eat Kei-chan, and also buy take-out products for you to enjoy Gujo’s classic local cuisine at home.
